Snickerdoodle Bars

So its fall and I cannot bake enough!  I have had the oven going nearly 24/7!  And I have a terriable addiction to Pinterest !!  (Almost as bad as my addiction to pumpkin!)

Any way  I have a husband, Mr, Homestead, who LOVES snickerdoodles but making the same old cookies time and again gets old so....


 Snickerdoodle Bars


2 2/3 cups flour
2 tsp baking powder
1 tsp salt
whisk together in a small bowl

2 cups packed brown sugar
1 cup REAL butter room temp (NOT MELTED!)
2 eggs room temp
1 TBLSPN vanilla
beat till smooth and fluffy!

Combine wet and dry - mix well and spread in a 9 x 13 LIGHTLY greased pan, I think a light spray works best. I have canola in a $1 spray bottle then wipe out the excess.

2 TBLSPNS white sugar
2 tsp cinnamon
mix in small bowl  - sprinkle over top

bake on 350 for 25 - 30 minutes
upon cooling it settles quite a bit :)

I have made this several times - the last time I used country crock "butter" - It did NOT turn out the same - it turned out VERY dense and almost wet all thru - I strongly suggest using real unsalted butter or only using 3/4 cup butter substitute possibly (I havent tried it again with the country crock with decreased butter, just a suggestion!!)

Moving!

Raise your hand if you cannot STAND moving!



My house is a total mess - I am trying to sort thru what we need vs yard sale stuff vs what to just throw away. I know I could donate instead of throw away but after it was a yard sale or hand me down item to begin with, which most of our things are, and its been used by 7 kids its trashed anyway.

Told the landlord we are moving and she wants to start showing asap....um hello - totally messed up house - 7 little kids- ......give me a few days!!

I have had a couple people offer to help but with me sorting out for a yard sale and the idea of not knowing whats packed where would make me go a little mad.

I cannot WAIT to be done and start on all the projects at the new house!

Ok - cant stand it.... More Pics!!!

I know some of you will think that I am crazy but oh well :)- As soon as I saw this house I knew it was perfect for us. I stayed closed mouth about it to family and friends for a while because one it was 60 miles from where we are now, didnt know if they would go down on price, and our taste isnt like anyone elses.

To tell the truth I totally had my hopes up.....its all I can think about! I tried to act like I didnt care one way or the other but John saw right thru it. We have looked at so many the last few years with no luck.

So heres the house....

Great News!!

So we have been looking for a house for a long time - We rent here and it has been great but 1.) we are just throwing our money away, 2.) we live on a VERY busy highway and have lost pets :( The kids cannot just go play in the yard 3.) we cannot do anything here to improve the place. 4.) we live on everyones way to town and people just stop in ALL THE time. I can go on and on.

Well - I finally got fed up and stopped looking a few weeks ago. We have a limited budget (one income, 7 kids) I would rather move closer to the church we want to go to. The only problem is Johns job. He works for the highway department and his highway barn is only 5.5 miles from our house. If we moved to the area where we have been looking he would have to drive 120 miles a day for a while....Like up to 2 to 5 years! Well we found out for the head of human resources that they are opening up transfers again starting in January thru March 2013!! That means only 5 - 7 months of driving!! We can handle the extra gas that long!!*****Update**** Just found out that it may only be about 6 weeks or so!

Now we just need to find a little running car.....

Oh and did I mention we found the house, just by chance.....Its AWESOME! Pictures coming soon but heres a few of the out buildings....

Zucchini Patties

I need to finish part 2 of the kraut post asap! But I thought I would post my recipe for Zucchini patties - No tutorial just recipe this time:)


(I cut my recipe in half since there is 9 of us)

2 cups zucchini (grated)
2 eggs
¼ yellow onion minced
½ cup flour (I use ½ white, ½ wheat)
½ c fresh goat mozzarella (or store bought)
SMALL handful fresh basil chopped fine
Pinch of sea salt
Sunflower oil for frying

Beat eggs – add in rest if indg. Mix very well –
put 2 tbsp oil on griddle or pan
when pan is hot use ¼ cup of mix and treat it like a pancake.
After a few minutes flip over – serve hot –

Good cold too with fresh tomatos -- I serve with corn relish when hot

KRAUT!! Part I

I decided to do this outside onthe picnic table. It was a wonderful sunny day and I have little counter space inside- plus I figured it would be a little messy....I was right!



Ok So this is my FIRST time making kraut. I have done a LOT of research trying to do it the old fashioned way, antique crock, cabbage cutter and all!


So first I cut several heads out of the garden. A few things I have read said not to wash the heads because it will wash off the natural bacteria on the leaves that helps with the fermintation, I SO would have if I bought the cabbage from the store but these are straight out of my garden, and I used flour to kill the cabbage worms. Plus it rained the night before so I figured what the hey.:)


And then these are some of the heads....


Coring the heads-- Yes I know my hands are puffy! I had a baby like 2 days before the pics were taken and my hands and feet always puff up afterwards!!


And now for a head of cabbage (outer leaves removed) to be shreaded on the cabbage slicer. Yes I know the slider box is missing. When I bought it there were two - one had the box the other did not. Price was $40 more for the one with the box....


And then I start shreadding, and shreadding, and shreadding, .....you get the picture.

Ok, well thats it for the first part of the kraut post. Second post will be done sometime tomorrow. Will have more in depth directions for what comes next. Trying to hold a baby and type with one hand is not easy! :)

Happy Fathers Day!

Well we got a little rain last night!!! Told John I figured the cow would calve out with the front moving thru. Shes been dripping milk for a week.

So when I got up and started making blackberry pancakes (per Johns request) and as I was washing out the batter bowl I looked out the window just as the sun was starting to rise and screamed!

John had just went out and already had the horses in the barn and was putting hay out but hadnt gotten around to checking on everything yet.

This is what I saw......



Hes is the cutest little thing! Of course its a bull calf but thats good! just means a little meat in the freezer later on. I always feel inclined to keep the heifers.

So John got blackberry pancakes, a pair of work jeans, and a bull calf for Fathers Day ;)

Dont know if I am more excited about the fresh milk, butter or cream.....OOOOH Blackberries and cream!!! I cannot wait!!!

Recipe without a picture.....

So in my last post I said I would post the Chocolate Chip Zucchini Bread recipe I used for breakfast this morning. And I said I would wait to post it after I took pics because it was still in the oven.....

Here is your picture.



As you can see, well actually you can't, it was amazing and the kids LOVED it.
I will post photos when I make another batch.

Heres the recipe:

Chocolate Chip Zucchini Bread

3 Cups Flour (I use half white & half wheat)
1/2 tsp salt
1 tsp baking soda
1 1/2 cups sugar
2 tsp cinnamon
1 cup Chocolate chips
2 cups shreaded zucchini
1/2 cup water
2 tsp vanilla
3 large eggs
1 cup real butter at room temp

Crank the oven to 350
Easy directions:
Mix all dry except the choco chips in large bowl
In another bowl mix all wet

Mix the two together untill well blended
mix in the choco chips 'till just mixed

Divide into 2 loaf pans

Cook for about an hour

*** you could also add in 1 cup of nuts at the same time you add in the choco chips*****
